Can I eat sourdough bread if I’m gluten sensitive? I’ve heard that some people can eat sourdough bread without any issues. Is it gluten free?
No. Sourdough bread is NOT GLUTEN FREE. Studies have been conducted where researchers used yeast and bacteria to ferment bread containing gluten. In these studies, the fermentation process led to a reduction in gluten, but not enough to be labeled gluten free. To be gluten free, a product must contain less than 20 ppm gluten. Most studies conducted on sourdough bread show that the amount of gluten reduction through the fermentation process does not achieve reducing gluten anywhere near this threshold.
