Dr. Alessio Fasano – Genes Plus the Wrong Food = Gluten Sensitivity
I recently gave a lecture at the Charlotte Gluten Free Expo in North Carolina. I had the pleasure of getting to talk privately with Dr. Fasano.
Dr. Fasano of the University of Maryland Mucosal Biology Research Center (and Celiac disease research center) discusses his insights into the differences between gluten sensitivity and celiac disease. He further goes on to explain three groups of gluten reactors:
- Those with an allergic (IgE) reaction to gluten (500-600 thousand people in the U.S. have this)
- Those with an autoimmune reaction to gluten (celiac disease – 3 million people in the U.S. have this)
- Immune reaction (non IgE)
He also talks about how gluten can affect any tissue in the human body without prejudice.
