Mrs. United States Joins Glutenology’s Team to Raise Celiac Awareness

The Houston Glutenology Expo continues to take shape… The more awareness about gluten sensitivity the better. Increased publicity about this medical issue will only serve to further educate doctors and patients alike. Part of our goal is to ignite this topic and bring this topic to the forefront of modern medicine. That is why we are hosting this conference in the Texas Medical Center. We are bringing out the proverbial “big guns” out as we strive to raise awareness of gluten sensitivity. This week we are happy to announce another great addition to the expo. Shannon Ford, Mrs. US 2011, will be one of our guest speakers. Mrs. Florida, Shannon Ford (35) of Miami, was recently named the new Mrs. United States 2011. Two years ago, Shannon was diagnosed with Celiac Disease, a lifelong illness requiring her to maintain a gluten free diet for the rest of her life. Shannon is proud to promote her platform, “1 in 133 – Raising Awareness for Celiac Disease”. It is her goal throughout her year to bring more attention to the illness and advocate for better labeling of our nation’s food supply. As part of her goal, she will be hosting Glutenology’s Houston Gluten Free Expo on February 4th, 2012. She also serves as a Miami Dolphins Ambassador (a select group of former Cheerleaders that represent the organization throughout the NFL season.
