Instructions
  1. Preheat oven to 425 F.

  2. In a large bowl, mix the turkey, garlic parsley, onion, egg, and breadcrumbs until well combined.

  3. Grease a baking sheet with some oil. Split the meat into 4 equal pieces, and form each into a mini meatloaf log. Place them on the baking sheet and put into the oven for 15 minutes.

  4. Meanwhile, mix the tomato, mustard, honey, and vinegar in a sauce pan and simmer for 10 minutes.

  5. Remove the meatloafs, and brush some of the sauce on each. Return to the oven and continue cooking for 15 minutes wile the sauce simmers.

  6. Brush the meatloafs a second time, and cook for a final 15 minutes.

  7. Remove from the oven and serve with additional sauce on the side.
