Preheat oven to 400 F.
Put the apples in a frying pan with some oil, the coconut sugar, a pinch of cinnamon, and some salt. Add a splash of water, cover, and simmer for about a half hour until a simple apple sauce is formed.
Mix the breadcrumbs in a large bowl and add in the herbs, onion powder, garlic powder, celery salt, and smoked paprika. Add another pinch of salt.
Finally stir in the olive oil and use a spatula to make sure it is distributed evenly.
One by one, take the pork chops and toss them in the breadcrumb mixture. Place on a parchment lined baking sheet.
Bake for about 15-20 minutes (time depends on thickness of pork chops) until the internal temperature reaches 150. I like to flip them once in the middle of cooking for even browning.
Remove from the oven, top with the apples, and serve.
