Ingredients
- CRUST
- 1 package Warrior Bread mix
- 1/2 cup granulated monk fruit sweetener or other preferred sweetener
- 1 cup melted vegan butter (I used Miyoko's)
- 1/4 tsp salt
- FILLING
- 1/2 cup melted vegan butter
- 1 cup maple syrup
- 1 cup coconut sugar
- 4 large eggs
- 3 cups pecan halves
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 F.
- Add the 1/2 cup monkfruit sweetener, 1 cup melted butter, and salt, to the bowl with most of the Warrior mix. Stir to combine, it will be a crumbly thick dough.
- Line a 9x13 baking pan with parchment paper and spread the dough out onto the pan, pressing it into a thin flat sheet.
- Whisk the 1/2 cup of melted butter with the maple syrup and coconut sugar together in a large bowl. Add in the eggs, pecans, and salt and whisk to combine fully.
- Pour this mixture over the crust in the pan and put it into the oven.
- Bake about 40 minutes until the topping is mostly set.
- Remove from oven and allow to cool completely. Slice into squares and serve.
