Pecan Bars

Ingredients

  • CRUST
  • 1 package Warrior Bread mix
  • 1/2 cup granulated monk fruit sweetener or other preferred sweetener
  • 1 cup melted vegan butter (I used Miyoko's)
  • 1/4 tsp salt
  • FILLING
  • 1/2 cup melted vegan butter
  • 1 cup maple syrup
  • 1 cup coconut sugar
  • 4 large eggs
  • 3 cups pecan halves
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 350 F.
  • Add the 1/2 cup monkfruit sweetener, 1 cup melted butter, and salt, to the bowl with most of the Warrior mix. Stir to combine, it will be a crumbly thick dough.
  • Line a 9x13 baking pan with parchment paper and spread the dough out onto the pan, pressing it into a thin flat sheet.
  • Whisk the 1/2 cup of melted butter with the maple syrup and coconut sugar together in a large bowl. Add in the eggs, pecans, and salt and whisk to combine fully.
  • Pour this mixture over the crust in the pan and put it into the oven.
  • Bake about 40 minutes until the topping is mostly set.
  • Remove from oven and allow to cool completely. Slice into squares and serve.
