This makes two pies:
Crust
I used Elana's coconut pie crust from the Gluten-Free Almond Flour cookbook by Elana Amsterdam. (you could use your favorite pie crust)
Filling
6C strawberry puree(used frozen berries for this and started with 9 cups whole frozen berries)
1/2 C water
1 C. Xylitol (or whatever sweetner you prefer)
1/3 C. Truvia (or whatever sweetner you prefer)
1 1/2 Tablespoon agar agar powder
Fresh strawberries cut up in bottom of crust. I used 3 or 4 big berries, however many you like.
Cook first 4 ingredients until boiling, whisk in agar agar powder and cook for another minute. I put in the fridge to cool for about an hour (don't know if you have to do this) Then, pour over the berries in the crust and refrigerate until set. Taste very much like Big Boy strawberry pie!
