Today for supper I cooked a spaghetti squash in the microwave. Left it whole cooked it for 12 minutes and let it sit for 5 minutes. Then, sliced it in half scooped out the seeds and scraped the flesh with a fork and woala spaghetti!
I made a sauce with home canned tomatoes, italian seasoning to taste, garlic powder to taste, chopped onion, chopped green pepper, hamburger or any ground meat, my secret ingredient is finely shredded carrots. NO one knows they are eating carrots and I figure it adds to the nutritional value! You could actually put the onions and green pepper in the food processor and disguise them as well.
I tried this many years ago. I loved the spagetti squash, but I didn't like it with tomatoe sauce on it. I like my squash prepared like regular squash instead. But it's good!
