    I have made these many times and they always turn out good.

    1 large ripe banana, mashed
    2/3 cup coconut flour
    1/2 cup honey
    1/3 cup coconut oil
    6 eggs, lightly beaten

    You can add 1 Tbsp Vanilla Extract also, but I prefer to leave it out.

    Mix it all together.
    Grease a muffin pan with coconut oil so they don’t stick.
    Pour the mix in, usually makes 12 muffins.
    Put it in the oven (350 degrees) for 20-25 minutes.
    Let cool down for about 2 minutes in the muffin pan, then remove muffins from pan on to a wire rack.
    Done!

    I have tried adding in fresh strawberries and just added on a tad bit extra coconut flour. It is a pretty runny mix, but has always turned out good and moist. I am contemplating adding in some cocoa powder next time… Blueberries..
