I’m new to the group, but not new to this way of eating (as sort of a ‘healthy-foodie’, I’ve been eating gluten-free, dairy-free, meat-free or somethingelse-free on and off for a long time now;-)).
Anyway, I only recently discovered I actually have a gluten-intolerance and am currently in the process of repairing a leaky gut (so a very restricted diet at the moment). I’m thrilled to be working on something that is making me healthier. And the food-challenge, well what can I say. Although I’d certainly rather have the option of eating anything I want to, anytime I want to, I am so incredibly grateful to have discovered what I think of as the cause of many ailments, that I really don’t mind. And like I said I love to cook.
