Ingredients
-2/3 cups coconut oil
-1 cup cocoa powder
-2 cups sugar
-12 eggs room temperature (but not warm)
-1 teaspoon vanilla
-1 cup coconut flour
-2 cups chocolate chips
-parchment paper
Preheat oven to 350 degrees. In a small saucepan blend cocoa powder
with coconut oil over low heat until thoroughly combined. Remove from
heat and let the mixture cool. In a seperate bowl, beat the eggs with the
sugar and vanilla. Blend the cocoa/oil mixture into the egg mixture.
Then stir in the coconut flour until there are no lumps. Line a 13 by 9
pan with parchment paper and pour the batter into the prepared pan.
Drop the chocolate chips evenly over the top of the batter. Bake 30-35
minutes.
