    Flourless Nut Butter Cookies
    (Makes approximately 15 cookies)

    1 cup natural nut butter (peanut, almond, sunflower, cashew, tahini, etc.)
    1 cup Sucanat or Sucanat with honey (can substitute white sugar, if needed)
    1 egg
    1 tsp non-aluminum baking powder

    Preheat oven to 350 degrees. Mix all ingredients and shape dough by teaspoonfuls
    into balls. Flatten balls of dough onto cookie sheet and bake for 10 -12 minutes or
    until set. Place cookies on cooling rack, cool and enjoy.

    These cookies are as good, or in my opinion better, than traditional peanut butter
    cookies made with white flour!

    Optional: Top cookies with Enjoy Life chocolate chips, or make thumbprints in
    cookies and place 1/2 tsp of natural fruit spread into the center prior to baking.
