    Looking for a dessert that is not loaded with sugar and processed garbage.  This take on the classic lemon bar is quite delicious.  It is TRUE gluten free, dairy free, processed sugar free, and paleo diet approved …  Remember, as is the case with all sweets and desserts, moderation is good tool to have control over.

    Casey’s Kitchen –
    Coconut Lemon Bars

    What you will need:

    1 cup raw almonds
    1 ½ cups mejdool dates, pitted
    1 cup fresh coconut flakes
    1 teaspoon vanilla extract
    1 lemon, zested and juiced

    Pulse the almonds in a blender to a few seconds to get a coarsely chopped mixture.  If you pulse too long, you will get almond meal (you don’t want this).  Mix all ingredients together in a large bowl.  Using your hands, kneed the ingredients together until they are combined.  This will take a few minutes.  Form small bars and wrap each in saran wrap.  Store in refrigerator or freezer.
