    I'm going to try a Coconut Cake that is legal for me…although I may skip all the extracts…not sure yet since I make my own vanilla with vodka and that could be made with grain. Although I can't eat eggs yet, I'll use Chia seeds which are suppose to be a good egg repalcement. We're having a pastured turkey but keeping everything on keyed down since I haven't been well. Here's the link for the cake just in case anyone is interested. The coconut “spread” is the same thing as coconut cream on Tropical Traditions. So healing and so good! As far as cookie baking,none of that goes on around here. I did buy my husband some shortbread cookies since he hasn't gone GF YET! Keep it simple yet keep it nutritious! Merry Christmas All!

    Is Coconut Cream the same as Raw Coconut Butter by Artisana? http://www.premierorganics.org ?

    It looks like it may be. Do you have some? The oil is on top and the cream is really hard. You have to warm it and stir it together? I've never heard it called butter, but each company comes up with it's own name. 

    I just made this cake…it may leave a lot to be desired of with the Chia seeds for eggs! It's pretty dense but most of the coconut flour recipes are. It will be something new to eat and something actually really good for me!

    After you mix the coconut cream and coconut oil with the other ingredients, pop it in the frig for a bit till it gets firm but not hard. Then take a hand blender and beat it! It whips up beautifully! Looks just like frosting.

    We just cut the Coconut Cake! Laugh It's delicious! It's dry, but that's in part that I can't use egg YET! I had some lemon & coconut extract from Fronteir  that are alcohol free so no chance of grain. I used 12 Tbsp of Chia seeds ground w/ 36 Tbsp of water in place of the eggs. It's not bad. My husband who eats all things gluten and sugar did the so so hand sign! I bet he'll have another piece!!!
