In this episode, Casey works her gluten free magic whipping up this delicious dressing (can also be used as a dip). This recipe goes very well with grass fed beef burgers. I grill the meat (medium rare) smear the dressing on top, wrap butter leaf lettuce around it, and enjoy! You can also dice tomatoes and add to the dressing.
If you are preparing this for a large group of guests, remember that avocado browns quickly. You can prevent this by squeezing fresh citrus juice (must be fresh – orange, lime, lemon work very well) into the dressing. The vitamin C and bioflavonoids will preserve the color of the avocado and keep it fresher longer.
