½ cup almond flour (or grind any nuts of your choice – almonds, pecans,
¼ cup butter, melted
¼ tsp salt
3 cups sharp cheddar cheese shredded (I used block parmesan that I blended)
½ cup sifted coconut flour.
Blend together almond flour, eggs, butter, salt and cheese. Add coconut
flour and kneed the dough in your hands for 2- 3 minutes. Form dough into 1
inch balls, place on an ungreased cookie sheet and flatten to a diameter of
about 2 inches. Bake at 250 degrees C for about 4 minutes.
