Preheat a frying pan or griddle pan to high heat.
Split the meat into 8 equal parts and roll them into “meatball” shapes. Season the outside liberally with salt and pepper
Depending on the size of your pan you will need to do this in batches. Add a little oil to the pan and then put the meatballs in. Cook about 2 minutes. Roll the meatballs over so the browned dot is on top and press with your spatula to make the burger as flat as you possibly can. Cook another 2 minutes.
Flip the burgers and top each with a slice of cheese. Cover and cook 1 minute to help the cheese melt. Double up the patties right in the pan, then transfer the double stacks to the bottom burger bun.
Top with pickles and any condiments of choice and serve.
