Savory "NOatmeal" bowls with sausage peppers and onions

Ingredients
 

Sausage

  • 1 lb. ground pork
  • 1/2 tsp chopped fresh sage (sub 1 tsp ground sage)
  • 1 tsp chopped fresh thyme leaves (sub 1/2 tsp dried thyme)
  • 1/2 tsp fennel seeds crushed
  • 1/2 tsp smoked paprika
  • 1/2 tsp crushed red pepper flakes
  • 1 pinch ground nutmeg
  • 1 pinch ground clove
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper

Bowls

  • 1 small bell pepper
  • 1/2 an onion
  • 1 can coconut milk
  • 3 tbsp almond meal
  • 3 tbsp hemp hearts
  • 2 tbsp flax meal
  • pinch of salt to taste

Instructions
 

  • Mix all the sausage ingredients in a large bowl. Stir and mix until well combined. Set aside covered in the fridge until ready to use.
  • In a large frying pan, cook the sausage, breaking it up in the pan and browning around the edges.
  • In another pan, bring some olive oil to medium high heat and add the peppers and onions. Cook for about 10 minutes until soften and starting to char around the edges.
  • In a large heavy bottom pot over medium heat, bring the coconut milk to a simmer. Whisk in the almond meal, hemp hearts, and flax meal. Stir and simmer for about 5 minutes to thicken. Remove from heat.
  • Pour the noatmeal into two serving bowls and top with the sausage, peppers, and onions.
  • Serve.
