Pear and Pecan Spinach Salad

Ingredients
 

  • DRESSING
  • 1/2 cup olive oil
  • 1 oz apple cider vinegar
  • 1 tsp mustard
  • 1 clove garlic, grated
  • juice of 1 lemon
  • 1 tbsp honey
  • 1 pinch dried thyme
  • SALAD
  • 4 cups baby spinach
  • 2 ripe pears, core removed, sliced thin
  • 1/2 cup pecans
  • 1 large shallot, sliced thin
  • 1/2 cup dried cranberries

Instructions
 

  • Mix all the dressing ingredients in a mason jar with a lid, or in a large bowl. Shake the jar vigorously until combined, or alternatively whisk until the mixture comes together.
  • Assemble the salad starting with the spinach, then the pears, pecans, shallot, and cranberries. Drizzle on as much dressing as needed. Serve.
