Pear and Pecan Spinach Salad
Ingredients
- DRESSING
- 1/2 cup olive oil
- 1 oz apple cider vinegar
- 1 tsp mustard
- 1 clove garlic, grated
- juice of 1 lemon
- 1 tbsp honey
- 1 pinch dried thyme
- SALAD
- 4 cups baby spinach
- 2 ripe pears, core removed, sliced thin
- 1/2 cup pecans
- 1 large shallot, sliced thin
- 1/2 cup dried cranberries
Instructions
- Mix all the dressing ingredients in a mason jar with a lid, or in a large bowl. Shake the jar vigorously until combined, or alternatively whisk until the mixture comes together.
- Assemble the salad starting with the spinach, then the pears, pecans, shallot, and cranberries. Drizzle on as much dressing as needed. Serve.
