Overnight Coconut Chia Pudding

Chia Pudding

  • 1 can low fat coconut milk
  • 1/2 cup water
  • 1/2 cup chia seeds
  • 1 tbsp honey
  • pinch of salt to taste

Topping Ideas

  • banana
  • strawberry
  • flax seed
  • blackberries
  • blueberries
  • honey
  • mint


  • In a large bowl, mix the cocnut milk, water chia seeds, honey. and salt. Stir well to remove any lumps of seeds. Pour the mixture into 4 airtight containers, seal and set in the fridge to thicken overnight.
  • Remove from the fridge, top with desired toppings, and serve.
