Italian Sausage and White Bean Soup
Ingredients
- 2 tbsp olive oil
- 1 pound hot or sweet Italian sausage- loose, or casings removed
- 1 onion, diced
- 3 carrots, diced
- 2 ribs celery, diced
- 6 cloves garlic, minced
- 6 cups chicken broth
- 2 cups coconut cream
- 1 tsp Italian herb seasoning
- 1/4 tsp red pepper flake
- 4 stalks of kale, chopped
- 1 can cannellini beans, strained and rinsed
Instructions
- Heat a large soup pot over medium high heat and add the olive oil. Add in the sausage and cook for 5 minutes. Add in the onion, carrot, and celery and cook for 7 minutes. Add in the garlic and cook 2 minutes.
- Add the broth and coconut cream. Add in the herbs and pepper flakes and bring to a simmer. Cook about 20 minutes. Add the kale and cook 10 more minutes. Add in the beans and cook a final 15 minutes. Taste and add salt and pepper as needed to taste. Serve.
