Italian Sausage and White Bean Soup

  • 2 tbsp olive oil
  • 1 pound hot or sweet Italian sausage- loose, or casings removed
  • 1 onion, diced
  • 3 carrots, diced
  • 2 ribs celery, diced
  • 6 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups coconut cream
  • 1 tsp Italian herb seasoning
  • 1/4 tsp red pepper flake
  • 4 stalks of kale, chopped
  • 1 can cannellini beans, strained and rinsed


  • Heat a large soup pot over medium high heat and add the olive oil. Add in the sausage and cook for 5 minutes. Add in the onion, carrot, and celery and cook for 7 minutes. Add in the garlic and cook 2 minutes.
  • Add the broth and coconut cream. Add in the herbs and pepper flakes and bring to a simmer. Cook about 20 minutes. Add the kale and cook 10 more minutes. Add in the beans and cook a final 15 minutes. Taste and add salt and pepper as needed to taste. Serve.
