Hash Breakfast Bowls

Total Time: 20 minutes
Servings 4 servings


  • HASH
  • 2 tbsp olive oil
  • 2 large sweet potatoes, diced
  • 1 medium onion, diced
  • 1 poblano pepper, diced
  • Salt and pepper
  • 8 slices bacon, cooked
  • 8 eggs - cooked your favorite way!
  • avocado
  • scallions
  • hot sauce
  • cilantro
  • try ham or sausage instead of bacon
  • roasted mushrooms
  • roasted tomato
  • sauteed spinach


  • Preheat a large frying pan with the oil and add in the diced sweet potatoes. Season with salt and pepper and cook about 10 minutes.
  • Add in the onion and pepper and cook another 15-20 minutes until the potatoes are soft and slightly browned.
  • Build the bowls starting with the hash, then topping it with the eggs, bacon, and any other toppings you like.
