Hash Breakfast Bowls
Ingredients
- HASH
- 2 tbsp olive oil
- 2 large sweet potatoes, diced
- 1 medium onion, diced
- 1 poblano pepper, diced
- Salt and pepper
- BOWLS
- 8 slices bacon, cooked
- 8 eggs - cooked your favorite way!
- OPTIONAL TOPPINGS
- avocado
- scallions
- hot sauce
- cilantro
- try ham or sausage instead of bacon
- roasted mushrooms
- roasted tomato
- sauteed spinach
Instructions
- Preheat a large frying pan with the oil and add in the diced sweet potatoes. Season with salt and pepper and cook about 10 minutes.
- Add in the onion and pepper and cook another 15-20 minutes until the potatoes are soft and slightly browned.
- Build the bowls starting with the hash, then topping it with the eggs, bacon, and any other toppings you like.
