Chicken and Pineapple Skewers

Total Time: 30 minutes
Servings 4 large skewers


  • 2 lbs. chicken breast cut into cubes
  • 1 large pineapple skin and core removed, cut into cubes
  • 1/4 cup coconut aminos
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 2 tbsp sambol chili paste
  • 2 cloves garlic grated
  • 2 inches ginger grated


  • Alternate the chicken and pineapple onto the skewers, pressing them close to each other to cook evenly.
  • Mix the aminos, honey, vinegar, chili paste, garlic, and ginger in a small bowl to combine. Split the sauce into two separate bowls.
  • Preheat grill to high heat. Char the skewers on the grill on all sides.
  • Turn heat to low and continue to cook the skewers, brushing on the sauce from one of the bowls as they cook. Continue to rotate and brush on more sauce. The sauce has a large amount of honey which can burn easily on the grill, so make sure to keep moving them around and adding more sauce often.
  • Serve with the sauce from the other bowl.
