Baked Beans
Ingredients
- 1 pound dried great northern or pinto beans
- 1 quart chicken or vegetable broth
- 6 slices bacon, chopped
- 1 large onion, sliced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 1 tablespoon coconut aminos
- 1/4 cup honey
- 1 tablespoon salt
- 1/4 cup apple cider vinegar
Instructions
- Soak the beans on the counter overnight in a large bowl of cold water. Strain and rinse after soaking.
- Preheat oven to 250 F
- In a large dutch oven or heavy oven safe pan, add the beans, broth, bacon, onion, cumin, paprika, oregano, chili powder, garlic powder, coconut aminos, and honey.
- Cook for 4 hours. Remove from the oven and stir in the salt and vinegar. If it seems too dry, add some water. Return to the oven and cook another 2 to 4 hours until the beans are tender.
