Ingredients

  • 1 pound dried great northern or pinto beans
  • 1 quart chicken or vegetable broth
  • 6 slices bacon, chopped
  • 1 large onion, sliced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 tablespoon coconut aminos
  • 1/4 cup honey
  • 1 tablespoon salt
  • 1/4 cup apple cider vinegar

Instructions

  • Soak the beans on the counter overnight in a large bowl of cold water. Strain and rinse after soaking.
  • Preheat oven to 250 F
  • In a large dutch oven or heavy oven safe pan, add the beans, broth, bacon, onion, cumin, paprika, oregano, chili powder, garlic powder, coconut aminos, and honey.
  • Cook for 4 hours. Remove from the oven and stir in the salt and vinegar. If it seems too dry, add some water. Return to the oven and cook another 2 to 4 hours until the beans are tender.
