Asparagus Salad with Bacon and Mint

  • 4 slices bacon
  • 1/2 cup mayo
  • 2 whole lemons (only use juice)
  • 1 tbsp mustard
  • dash of hot sauce
  • salt and pepper to taste
  • 1 bunch asparagus cleaned and woody stems removed
  • 1 cup quartered cherry tomatoes
  • 20 mint leaves


  • Preheat a frying pan over medium heat and add the bacon. Cook, flipping occasionally, for about 10 minutes until crispy.
  • Meanwhile, mix the mayo, lemon, mustard, and hot sauce in a measuring cup and stir to combine.
  • Remove the bacon from the pan, and in the same pan with the bacon fat, add the asparagus. Cook for about 5 minutes, stirring often to soften. Remove from the pan and dry on a paper towel lined plated.
  • Split the asparagus between two serving plates. Drizzle on the dressing. Top with tomatoes, bacon, and mint.
  • Serve.
