Many people who go gluten free continue to complain about digestive and intestinal issues. In my clinical experience some of the most common reasons for this have to do with perpetual hidden gluten exposure, and pre-existing damage to the intestine, liver, gall bladder, and pancreas from years of prior gluten exposure. Some of the most common examples include salad dressings, soups, and soy sauce. Cross contamination occurs because your food was prepared near other foods that contain gluten. This happens commonly at restaurants during food preparation where counter surfaces and kitchen utensils are shared.

Keep in mind that gluten exposure occurs very frequently when purchasing packaged or processed foods. Research shows that this problem occurs as frequently as 41% of the time. A similar finding was recently discovered in random supplement products tested for gluten. 24% of products tested were cross contaminated.
