Why Grass Fed Beef Vs. Grain Fed?

There is a huge difference between pastured grass fed beef and grain fed beef.  Chemically speaking, the two meats are not the same.

  • Grass fed beef has more omega three fatty acids.  These fats help support a normal inflammatory response.
  • Grass fed beef has higher levels of beta carotene and other vitamins.
  • The fat in grain fed beef is highly inflammatory and contributes to heart disease, cancer, diabetes, and obesity.

Casey’s Kitchen—Grass-Fed Meatballs

What you need:
2 pounds grass-fed ground beef
Red/yellow peppers sautéed in olive oil and garlic
2 eggs, slightly beaten
1 Tablespoon oregano
1 teaspoon each salt and pepper
2 cups tomato sauce
1 – 2 cups almond flour (2 cups will give you firmer meatballs)

Instructions:
Mix all ingredients in a large bowl.  Form into balls.
Bake for 20 minutes at 350 degrees or until golden brown.

Serve with your favorite gluten-free sauce or press into a loaf pan before baking to make a delicious meatloaf.

  • Going gluten free has made a dramatic difference in my life. Gone are the questions about my digestive issues that plagued me most of my adult life, my fibromyalgia rarely flares up. It is comforting to know that by eating gluten free I cut my risk of many intestinal cancers. Another benefit is the research and education that I have undergone about nutrition that I may not have every questioned.

    I was just daignosed gluten sensitive a few months ago. I’m seeiong a great natropath/MD who has been such a big help! He told me that the 2-week gluten-free trials I’ve done in the past were inadequate & that it can take up to 2 months without gluten before seeing improvement, so for those of you who’ve had your GP recommend a 2 week GF trial & didn’t see a difference, try it for a bit longer. If you see improvement, but still are having problems, look at things like your body lotions, lip balm, mouthwash, toothpaste & cosmetics, many of those also contain gluten & will cause problems for those who are very sensitive!
