Soak the beans on the counter overnight in a large bowl of cold water. Strain and rinse after soaking.
Preheat oven to 250 F
In a large dutch oven or heavy oven safe pan, add the beans, broth, bacon, onion, cumin, paprika, oregano, chili powder, garlic powder, coconut aminos, and honey.
Cook for 4 hours. Remove from the oven and stir in the salt and vinegar. If it seems too dry, add some water. Return to the oven and cook another 2 to 4 hours until the beans are tender.
