1onion, diced
3carrots, diced
2ribscelery, diced
6clovesgarlic, minced
6cupschicken broth
2cupscoconut cream
1tspItalian herb seasoning
1/4tspred pepper flake
4stalksof kale, chopped
1cancannellini beans, strained and rinsed
Instructions
Heat a large soup pot over medium high heat and add the olive oil. Add in the sausage and cook for 5 minutes. Add in the onion, carrot, and celery and cook for 7 minutes. Add in the garlic and cook 2 minutes.
Add the broth and coconut cream. Add in the herbs and pepper flakes and bring to a simmer. Cook about 20 minutes. Add the kale and cook 10 more minutes. Add in the beans and cook a final 15 minutes. Taste and add salt and pepper as needed to taste. Serve.
