I would think you could use some white beans for protein, if you can find a brand guaranteed gluten free. Elanaspantry.com has a lot of good recipes. Start doing google searches on grainfree recipes, if they call for milk you can substitute with almond milk or coconut milk. Eggs might be a little trickier, but I'm sure you could find some with no eggs (put that in your search too). Good luck and don't stop searching. New recipes come on all of the time. The paleo diet websites might have some recipes for you too.
