Have you taken supplements to help in your recovery? Do you take pancreatic enzymes? I am about 6 months true gluten free and have done all of those and more. I am very well, but expect some foggy days to come. I had 30 years of symptoms before I got diagnosed. People say it takes from 6 months to 2 years to recover-and sometimes longer. You may have more healing and be able to handle diverse foods later.
I had an food sensitivity test and was intolerant to all but 11 of 60 things I was eating. I can eat nearly all of them, though, as long as I rotate my diet. This switch seemed to help me clear the fog. It is recent, so I don’t know what I will say next week.
