We just cut the Coconut Cake! Laugh It's delicious! It's dry, but that's in part that I can't use egg YET! I had some lemon & coconut extract from Fronteir  that are alcohol free so no chance of grain. I used 12 Tbsp of Chia seeds ground w/ 36 Tbsp of water in place of the eggs. It's not bad. My husband who eats all things gluten and sugar did the so so hand sign! I bet he'll have another piece!!!
