I did contact to company a few years ago and if I remember this is the only flour they process.  I'm just wondering if it True Gluten Free or Not.  As for as the processing I not toworried about. The owner them self have Celiac Disease.  I guess I'm questioning it because it like the Sorghum flour, I believe Dr. O indicated that it has corn in it which I would have never quested.  So I was hoping that he may have heard were this Manioc flour comes from and is it safe.  It makes great tortillas.
