Millet is a grain and does contain gluten.  Amaranth and Buckwheat are not grains (pseudo grains) but have proteins in them that are similar to gluten.  Additionally, these grain substitutes are commonly cross contaminated.  If you want to be healthy, pseudo grains are not worth the risk.
