If you missed our last gluten free meeting, the recipe below was one of the side dishes brought it. It is a great for those following a gluten free diet, but also works for those who are on paleo or dairy free diets.
This recipe is an excellent side that can be accompanied with almost anything. Cabbage is an excellent source of nutrients including magnesium, potassium vitamin K, vitamin B6, and vitamin C. It is also a good source of digestible fiber, and helps promote bacterial balance in the intestines. The carrots and peppers provide an excellent source of plant based antioxidants – including the carotenoid family. For versatility, the ingredients can be substituted with any of your favorite veggies as well. It is delicious and takes few minutes to make.
- Bell Pepper: Green, Red, Yellow
- Balsamic Vinaigrette: Garlic, Ginger, Onion, Olive Oil, Balsamic Vinegar, Salt, Pepper
Shred all vegetables and mix with vinaigrette and chill. Enjoy!
