Pancakes are Back
This recipe from Casey’s Kitchen is a great alternative for pancakes. Not only is it gluten free, it is sugar, dairy, and legume free as well (that means if you are following a paleo diet, you can eat these as well). This one is dedicated to a couple of friends of mine – Mike and Rick. They love eating pancakes. Can’t get enough pancakes. Problem is, they should probably both be eating a gluten free diet!
½ cup almond butter
1 Tablespoon cinnamon
Sea salt to taste
Blend ingredients in food processor. Heat a saucepan with coconut oil. Pour pancake batter into pan in small pancakes. Sauté on each side for approximately 2 minutes. Top with your favorite topping and ENJOY! You can substitute the almond butter for other nut butters if you have allergy or prefer a different flavor.
