Although corn is referred to as a gluten free food item, it is technically not gluten free. The type of gluten found in corn is called zein. This gluten has been shown in a number of published research studies to cause inflammation in those with gluten sensitivity. A list of some of these studies can be reviewed here.  You might also find this extensive video on corn gluten helpful…
