<h2>Casey&#8217;s Kitchen—Grass-Fed Meatballs</h2>
<p><strong>What you need:</strong><br />
2 pounds grass-fed ground beef<br />
Red/yellow peppers sautéed in olive oil and garlic<br />
2 eggs, slightly beaten<br />
1 Tablespoon oregano<br />
1 teaspoon each salt and pepper<br />
2 cups tomato sauce<br />
1 – 2 cups almond flour (2 cups will give you firmer meatballs)</p>
<p><strong>Instructions:</strong><br />
Mix all ingredients in a large bowl.  Form into balls.<br />
Bake for 20 minutes at 350 degrees or until golden brown.</p>
<p>Serve with your favorite gluten-free sauce or press into a loaf pan before baking to make a delicious meatloaf.</p>

<h2>Wider Recognition of Gluten Intolerance is a Good Thing&#8230;</h2>
<p>Dr. Oz points out that gluten can be linked to bloating, hypothyroidism, <a title="Gluten intolerance and migraine headache" href="http://www.glutenfreesociety.org/gluten-free-society-blog/gluten-intolerance-and-migraines-is-there-a-connection/">migraine headache</a>, gastric distress, <a title="autoimmune disease and gluten" href="http://www.glutenfreesociety.org/gluten-free-society-blog/gluten-sensitivity-spectrum-not-just-a-celiac-issue/">autoimmune disease</a>, brain fog, weight loss, <a title="gluten and sleep" href="http://www.glutenfreesociety.org/gluten-free-society-blog/sleep-deprivation-will-stifle-your-gluten-free-results/">poor sleep</a>, and much more.  He goes on to say that gluten affects nervous system chemicals.</p>

<h2>IF You Have Migraine Headaches, Do This First</h2>
<ul>
<li><strong>Rule out food triggers for the headache -</strong>  Common triggers are chocolate, caffeine, alcohol, cheese and other dairy products, wine, processed lunch meats and artificial sweeteners like Nutrasweet (aspartame.</li>
<li><strong>Get tested for vitamin and mineral deficiencies</strong> &#8211; Vitamin B2, B-12, <a title="Gluten and magnesium deficiency" href="http://www.glutenfreesociety.org/gluten-free-society-blog/gluten-sensitivity-and-magnesium-deficiency/">magnesium</a>, and CoQ10 are a few nutrients that when deficient can trigger migraine headaches.</li>
<li><strong>Avoid the use of perfumes and scented soaps</strong> &#8211; many of the chemicals in these items can trigger migraines directly.</li>
</ul>

<h2>8 Simple Steps to Staying Sick&#8230;</h2>
<div>Going on a  gluten free diet often times leads to great improvements in health.  However; if we focus only on gluten free and ignore other lifestyle factors, our improvements will plateau and our health will decline. The following is a list of  lifestyle factors that are often ignored and lead to major health problems if you ignore them&#8230;</div>
<ol>
<li><strong>Eat processed foods</strong> &#8211; processed foods are high in calories and low in nutrient density. This combination will accelerate the aging process and put you in a state of nutritional deficiency.</li>
<li><strong>Eat processed &#8220;gluten free&#8221; food items</strong> &#8211; These products are designed to replace all of the things people miss on a gluten free diet &#8211; Bread, pasta, cereal, cake, crackers, donuts, cookies, etc. Most of them are not <a title="TRUE Gluten Free diet" href="http://www.glutenfreesociety.org/videotutorials/what-is-gluten-sensitivity-an-easy-explanation-to-avoid-all-the-confusion/">TRUE gluten free</a> and cause multiple health problems. As a general rule they are not healthy. &#8220;Gluten Free&#8221; on the package does not make it so. Don&#8217;t get lost in the marketing hype. Remember why you went gluten free? To regain your health.</li>
<li><strong>Eat genetically modified food</strong> &#8211; from kidney to liver damage, these foods are dangerous and have not gone through enough study to be widely recommended as safe. In addition, some scientists believe that <a title="gmo and celiac disease" href="http://www.glutenfreesociety.org/gluten-free-society-blog/did-genetic-manipulation-of-grain-cause-celiac-disease/">genetically modified grains</a> have increased celiac disease.  <strong>Eat at your own risk!</strong></li>
<li><strong>Ignore exercise</strong> &#8211; the body is designed to move. Not exercising reduces oxygen and lymph flow to your tissues leading to a reduction in immune function and an acceleration of joint aging.  Maintaining muscle as we age is one thing everyone in the scientific community agrees on when it comes to prolonging human life.</li>
<li><strong>Go to bed late</strong> &#8211; Rest is a critical component to hormone regulation and the healing process. Most Americans burn the midnight oil then wake up early to go to work.  <a title="sleep and health" href="http://towncenterwellness.com/announcements/good-sleep-habits-good-health/">Inadequate sleep increases</a> ones risk of heart disease, cancer, diabetes, and more.</li>
<li><strong>Avoid Sunshine</strong> &#8211; contrary to popular belief, sunshine does not cause skin cancer (sun burns do). Daily sunshine is an important component to health. Sunlight helps us make important hormones and vitamin D. Lack of sunshine has been shown to cause 19 different types of cancer.  Additionally, scientists have discovered new non vitamin D hormone like substances made by the skin that help fight cancer</li>
<li><strong>Drink or bathe in unfiltered water</strong> &#8211; We are now finding prescription <a title="drugs in the water" href="http://www.chemicalfreewater.net/drugs-in-your-drinking-water/">medications in our drinking water</a>. Add this to all of the other chemicals and you have a wonderful cocktail of artificial estrogens and antidepressants every time you go to shower or take a drink of water. <a title="whole house water filter" href="http://www.chemicalfreewater.net/">Whole house water filters</a> will become more popular over the next ten years because of this ever growing problem.</li>
<li><strong>Over Using Medications</strong> &#8211; Many medications destroy the intestinal lining and normal bacteria of the gut.  Common examples include medications for heartburn, antibiotics, and pain relievers.  Remember that illness is not caused by a deficiency of drugs.  Therefor, using drugs to &#8220;cure&#8221; illness does not work.</li>
</ol>

<p>Hopefully we all share the common goal of good health, prosperity, and spiritual peace for the new year.  Over the past year, we have seen the popularity of the gluten free diet explode.  Hundreds of thousands of sick people have gravitated toward this way of eating and noted dramatic improvements in their health.  In my office alone, I have treated thousands of patients with gluten intolerance and seen<a title="gluten testimonials" href="http://www.glutenfreesociety.org/gluten-free-testimonials/"> miraculous improvements in health</a>.  The gluten free diet is a true ally on a path to good health.  Will the next year see the diet diminish into the <em>diet fad graveyard?  </em>Absolutely not, but the diet will evolve.  Here are my predictions of the gluten free diet going into 2012&#8230;</p>
<h2>Predictions for Gluten Free in 2012</h2>
<ul>
<li>The number of Gluten Free Warriors will continue to grow as more people and more physicians learn of the benefits of the diet.</li>
<li>The gluten free food industry will continue to grow and create thousands of new convenient based products.</li>
<li>More and more people will <a title="gluten free diet fails" href="http://www.glutenfreesociety.org/gluten-free-society-blog/do-you-have-gluten-whiplash/">stop responding to the gluten free diet</a> as a whole.  (The health benefits will not be as noticeable)</li>
</ul>
<h2>This is why the evolution of gluten free is inevitable.</h2>
<ul>
<li>Because of the gluten free food industry growth, more people will <a href="http://www.glutenfreesociety.org/gluten-free-society-blog/traditional-gluten-free-diets-fail/">fail to respond to the traditional gluten free diet.</a></li>
<li>The failure for people to improve on the diet will lead to enhanced popularity of the <a title="TRUE Gluten Free diet" href="http://www.glutenfreesociety.org/videotutorials/what-is-gluten-sensitivity-an-easy-explanation-to-avoid-all-the-confusion/">TRUE gluten free diet</a>.</li>
<li>This will lead to an emerging trend toward replacing processed food with real food.</li>
<li>This in turn will lead to families rediscovering their kitchens and playing a more active role in their health.</li>
</ul>
<h2>Why This Will Happen</h2>
<ul>
<li>People are sick and tired of being sick and tired.</li>
<li>People are sick of having doctors dismiss them.</li>
<li>There is a growing grass roots movement that is recognizing the importance of food as a major player in health.</li>
<li>Drugs and medications don&#8217;t heal or cure chronic diseases, food and other lifestyle factors do.</li>
<li>One cannot achieve or maintain health eating unhealthy food.  Most gluten free labeled products are highly processed, <a title="genetic wheat increases celiac disease" href="http://www.glutenfreesociety.org/gluten-free-society-blog/modern-wheat-breeding-increases-celiac-disease-occurrence/">genetically modified</a>, chemically loaded Franken foods &#8211; examples of this are Bisquick, Chex Cereals, cake mixes, breads, etc.  These foods have become more and more popular.  This mass <em>gluten free</em> substitution is part of the problem many will have to overcome in order to restore health.  Many health educators and celiac advocates have completely ignored this very important fact.  Many <em>educational </em>websites continue to promote overpriced &#8220;gluten free&#8221; junk food.</li>
<li> We have gone through 30 years of dietary foolishness and ignorance.  Fortunately, the creation of the internet has allowed for the mass sharing of information.</li>
<li>The popularity of the &#8220;Green Movement&#8221; is growing.  This includes &#8220;Green Food&#8221;</li>
</ul>
<h2>What We Should See From Food Companies</h2>
<ul>
<li>A trend toward preparing real food in frozen deliverable packages.</li>
<li>A reduction in chemical ingredient usage.</li>
<li>A greater use of organic ingredients.</li>
</ul>
<h2>What We Should See Emerge in Medicine</h2>
<ul>
<li>Continued efforts at creating a <a title="celiac vaccination" href="http://www.glutenfreesociety.org/gluten-free-society-blog/vaccination-for-gluten/">vaccination for celiac disease</a></li>
<li>Traditional doctors moving toward <a title="functional medicine doctor" href="http://www.glutenfreesociety.org/gluten-free-society-blog/doctor-denial-why-most-doctors-ignore-gluten-sensitivity/">holistic medicine</a></li>
<li>A greater focus on food and nutrition as a medicine</li>
<li>Even more new discoveries in the realm of gluten proteins.  2011 saw the discovery of <a title="new glutens discovered" href="http://www.glutenfreesociety.org/gluten-free-society-blog/new-glutens-discovered-to-be-harmful-to-health/">400 new glutens</a> and <a title="gluten proteins" href="www.glutenfreesociety.org/gluten-free-society-blog/glo-3a-antibodies-and-celiac-disease/">gluten like proteins</a> that contribute to celiac disease.  2012 will see an even greater list of new discoveries!</li>

<p>It is no medical mystery that gluten can cause vitamin and mineral deficiencies. Selenium is a mineral with multiple functions within the body. A short list of some of selenium&#8217;s more common roles is listed below:</p>
<ul>
<li>It plays a role in the production of active thyroid hormone (see chart below).</li>
<li>It is a powerful anti-inflammatory and helps to regulate immune function.</li>
<li>It plays a role in blood viscosity (reduces excessive clotting of the blood).</li>
<li>It drives the most powerful antioxidant system in the body.</li>

<h2>Relationship Between Gluten and Selenium</h2>

<p>This study points out that no only does gluten induced selenium deficiency cause abnormal thyroid hormone production, it leads to excessive inflammation and autoimmune disease.</p>
<p>In previous posts we have discussed how going on a gluten free diet can lead to fat loss. This is one of those mechanisms as hypothyroid disease is a common manifestation of gluten intolerance.</p>

<h2>Other Nutrients Important for Thyroid Function -</h2>

<li><strong>Iodine</strong> &#8211; this mineral helps the body build T4 (the hormone that doctors commonly measure that floats through the bloodstream)</li>
<li><strong>Vitamins D and A </strong>- these fat soluble vitamins allow T3 (the active hormone) to communicate with your DNA and increase your metabolism.</li>
<li><strong>Zinc &amp; Magnesium</strong> &#8211; these minerals help your body make TSH (the hormone made in your brain that tells your thyroid gland to make T4).</li>

			<content:encoded><![CDATA[<div id="_mcePaste"><img class="alignright size-medium wp-image-4382" title="Happy Children Without Autism" src="http://www.glutenfreesociety.org/wp-content/uploads/the_smiles3-300x199.jpg" alt="" width="300" height="199" />The popularity of the gluten free diet has grown dramatically.  More and more parents are turning toward a gluten free diet to help alleviate symptoms of autism and other learning disorders in their children.  To a large degree, many in the medical community have ridiculed this, stating that diet and the autistic spectrum have nothing to do with one another.  Medical research and anecdotal evidence however shows that thousands of people have had improvement with diet alterations.</div>
<h2>What does diet have to do with behavior?</h2>
<div>The food we eat is comprised of carbohydrates, fats, protein, nucleic acids, phytonutrients, vitamins, minerals, water, and other nutrients necessary to sustain the healthy function of the body.   It is the basis of how our internal biochemistry works.  Ignoring the possibility that food contributes to disease is a cardinal mistake.  Food is a drug and therefor can have drug like properties.  One person&#8217;s food is another person&#8217;s poison.  That being said, it goes to say that investigating the potential for a person to react negatively to food should be a primary tool in the &#8220;tool-belt&#8221; of all physicians.</div>
<div></div>
<p>In the research study below, a case is presented of a 5-year-old boy diagnosed with severe autism at a specialty clinic for autistic spectrum disorders.  After initial investigation suggested underlying celiac disease and varied nutrient deficiencies, a gluten-free diet was instituted along with dietary and supplemental measures to secure nutritional sufficiency.</p>
<p>The patient&#8217;s gastrointestinal <span style="text-decoration: underline;"><strong>symptoms rapidly resolved, and signs and symptoms suggestive of autism progressively abated</strong></span>. This case is an example of a common malabsorption syndrome associated with central nervous system dysfunction and suggests that in some contexts, nutritional deficiency may be a determinant of developmental delay. It is recommended that all children with neurodevelopmental problems be assessed for nutritional deficiency and malabsorption syndromes.</p>
<p>Another research study found a strong correlation with autism and intestinal permeability &#8211; AKA leaky gut syndrome.  The conclusion of the study is below:</p>
<blockquote><p>CONCLUSIONS:</p>
<p>The results obtained support the leaky gut hypothesis and indicate that measuring IPT (intestinal permeability)could help to identify a subgroup of patients with autism who could benefit from a gluten-free diet.  The IPT alterations found in first-degree relatives suggest the presence of an intestinal (tight-junction linked) hereditary factor in the families of subjects with autism.</p></blockquote>

<h2>Gluten Free Society&#8217;s Stance</h2>
<p>This is a great case study example of gluten associated autism. The authors make an excellent recommendation in testing all children with abnormal neurodevelopment for nutritional deficiencies and malabsorption related diseases.  This type of testing can be performed by Spectracell laboratories in Houston, TX &#8211; <a href="http://www.spectracell.com" target="_blank">www.spectracell.com</a>  You can use the labs physician finder to identify which doctors in your area are capable of performing this testing.</p>
<h2>What to Do If Your Child Has Been Diagnosed With Autism</h2>
<ul>
<li>Test for both gluten and dairy sensitivity immediately.  It would also be prudent to test for other food allergens.</li>
<li>Remove sugar and artificial dyes from their diet.</li>
<li>Remove processed foods from their diet.</li>
<li>Stop any treatments (dental or medical) that introduce mercury into the body.  Vaccination and flu shot are common sources.</li>
<li>Test for vitamin and mineral deficiencies &#8211; especially B-vitamins.  The bodies production of neurotransmitters (chemicals that allow proper communication in the nervous system) is largely dependent on vitamin B-6, folate, B-12, B-5, B-1, zinc, copper, magnesium, and vitamin C.</li>
</ul>
<p>It is also important to remember that gluten has been shown in numerous research studies to <a href="http://www.glutenfreesociety.org/gluten-free-society-blog/neurological-disease-common-in-patients-with-celiac-disease/">damage nerve tissue</a>. Anyone with neurological illness of unknown origin should be <a href="http://www.glutenfreesociety.org/genetic-testing-for-gluten-sensitivity/">genetically tested</a> for gluten sensitivity.</p>

<h2><strong>Leading Researchers Recognize Non Celiac Gluten Sensitivity<br />
